Congratulations to our Member of the Week, Ithaca Soy! The Chamber would like to recognize Ithaca Soy for being one of the only handmade tofu producers in New York State.⁠ Ithaca Soy has been a staple of the Ithaca community for over 25 years. In July 2015 Adam Potenza became the newest owner of this business. It was truly special for him because Potenza Organic Farms, run by Adam’s father Tony, is the sole supplier of the organic soybeans used to make Ithaca Soy’s products. Tony Potenza was one of the founding members of NOFA-NY and one of the pioneers of the organic agriculture movement, both in New York and nationally.⁠

All the soybeans are grown in Tompkins, Seneca, and Schuyler counties, within 20 miles of Ithaca Soy’s production facility, making their products hyper-local. Adam has had a hand growing these beans on the family farm in the past, and he says, “It’s amazing to see the whole process, from a bean in the ground to the tofu on your plate!” ⁠Thank you, Adam, for carrying on Ithaca Soy’s commitment to bringing people the freshest handmade, unpasteurized, artisanal, small-batch tofu products possible!⁠ Listen to the interview here.
